  • 400g spaghettini no 7 barilla brand
  • 1 leek white section only halved lengthways
  • 2 tablespoons olive oil
  • 2 garlic cloves crushed
  • 160mls 2 3 cup massel chicken style liquid stock
  • 600g smoked chicken skin discarded roughly chopped
  • 3 160g marinated artichokes quartered
  • 2 tomatoes quartered seeds removed flesh diced
  • 80g 1 2 cup walnut halves roughly chopped
  • salt ground black pepper to taste

  • cook the spaghettoni in a large saucepan of salted boiling water following packet directions until al dente drain and cover to keep warm
  • meanwhile wash the leek well drain and then thinly slice crossways heat the olive oil in a large frying pan over medium low heat add the leek and garlic and cook stirring occasionally for 5 minutes or until the leek is soft
  • increase heat to medium and add the stock chicken artichokes and tomatoes cook for 4 5 minutes or until the chicken is heated all the way through
  • stir in the walnuts and season with salt and pepper add the drained spaghettoni and toss to combine serve immediately
