The ingredient of Chicken And Bacon Pies

  • 2 tablespoons sunflower oil
  • 1 onion
  • 5 bacon rashers
  • 2 chicken breast fillets
  • 150g cheddar cheese grated
  • 1 clove garlic
  • 1 teaspoon dried tarragon
  • 3 sheets puff pastry
  • 1 egg lightly beaten
  • 50g butter
  • 50g plain flour
  • 1 cup white wine
  • 1 cup milk
  • salt and pepper to taste

The Instruction of chicken and bacon pies

  • preheat oven to 200c grease 8 individual fluted tart tins
  • defrost puff pastry cut each sheet puff pastry into half and half again press a square of the cut puff pastry into each tin
  • to make bechamel sauce melt butter in a saucepan add flour and whisk until smooth with the heat at a medium low temperature add white wine and whisk until it thickens
  • slowly add the milk whisking constantly until a smooth thick sauce is achieved add salt and pepper to taste and stir in 100g of cheddar cheese
  • to make filling chop the onion crush the garlic chop the chicken breast chop the bacon rashers removing rind and fat
  • in a large fry pan or heavy based pot heat oil over low heat add the onion garlic and tarragon and stir with a wooden spoon until tender
  • bring heat up to maximum and add the chopped chicken and bacon and cook until nicely browned stirring often reduce heat to low and add bechamel sauce to chicken mixture and stir until combined fill the pie tins and add a little cheese on top
  • cut shapes with remaining pastry with a small cookie cutter to put on top of each pie glaze with a lightly whisked egg
  • bake in the oven and cook until golden for about 25 30 minutes
