  • 150g sweet potato peeled roughly chopped
  • 400g can chickpeas drained rinsed
  • 1 3 cup sultanas
  • fresh coriander leaves to serve
  • chopped pistachio kernels to serve
  • steamed couscous to serve
  • plain reduced fat greek style yoghurt to serve
